The clipping path works just like any other path, but the layer mask makes it possible to blur the transition between the object and the background. Objects with blurry edges will integrate better with the new background using a layer mask.
For this reason layer masks are better suited to cut out elements with a soft/blurry edge, like hair or other elements where a soft edge should be retained.
